Step 1: Prepare the Rice
- Rinse the sushi rice until the water runs clear, then cook according to package directions.
Step 2: Season the Rice
- Mix the rice vinegar, sugar, and salt, then gently fold the mixture into the warm rice.
Step 3: Cool the Rice
- Allow the seasoned rice to cool to room temperature before assembling the rolls.
Step 4: Prepare the Fillings
- Slice the cucumber and avocado, then warm the unagi according to package instructions.
Step 5: Place the Nori
- Lay a sheet of nori shiny-side down on a bamboo sushi mat.
Step 6: Add the Rice
- Spread an even layer of sushi rice over the nori, leaving about 1 inch uncovered at the top.
Step 7: Add the Fillings
- Arrange the unagi, cucumber, and avocado across the center of the rice.
Step 8: Add the Sauce
- Drizzle a small amount of unagi sauce over the fillings.
Step 9: Roll the Sushi
- Using the bamboo mat, tightly roll the sushi away from you.
Step 10: Seal the Roll
- Moisten the top edge of the nori with water and press gently to seal.
Step 11: Repeat the Process
- Continue assembling the remaining rolls using the rest of the ingredients.
Step 12: Add Sesame Seeds
- Sprinkle sesame seeds over the outside of the rolls if desired.
Step 13: Slice the Rolls
- Cut each roll into 6 to 8 pieces using a sharp knife.
Step 14: Serve
- Serve immediately with soy sauce, pickled ginger, and wasabi.
