Step 1: Preheat the Oven
- Preheat your oven to 350°F (175°C). Grease and line two 9-inch cake pans with parchment paper.
Step 2: Combine the Dry Ingredients
- In a large mixing bowl, whisk together the flour, granulated sugar, brown sugar, baking soda, cinnamon, and salt.
Step 3: Mix the Wet Ingredients
- In a separate bowl, whisk together the eggs, vegetable oil, and vanilla extract until smooth.

- Pour the wet ingredients into the dry ingredients and stir until just combined.
Step 5: Add the Carrots and Pineapple
- Fold in the grated carrots, crushed pineapple, and chopped pecans or walnuts.
Step 6: Divide the Batter
- Evenly divide the batter between the prepared cake pans.
Step 7: Bake the Cakes
- Bake for 30 to 35 minutes or until a toothpick inserted into the center comes out clean.
Step 8: Cool Completely
- Allow the cakes to cool in the pans for 10 minutes, then transfer them to a cooling rack and cool completely.
Step 9: Make the Frosting
- Beat the cream cheese and butter together until smooth. Gradually add the powdered sugar and vanilla extract, mixing until creamy.
Step 10: Frost the Cake
- Place one cake layer on a serving plate, spread frosting on top, add the second layer, and frost the top and sides.
Step 11: Chill Briefly
- Refrigerate the cake for 20 to 30 minutes to help the frosting set.
Step 12: Serve
- Slice and serve the cake once the frosting has slightly firmed up.
