Ingredients
  

  • 4 cups sweet corn kernels
  • 1 tablespoon olive oil
  • 1 tablespoon lime juice
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon fresh parsley chopped

Method
 

Step 1: Prepare the Corn
  1. If using fresh corn, remove the kernels from the cobs and place them in a large bowl.
Step 2: Season the Corn
  1. Add the olive oil, smoked paprika, garlic powder, salt, and black pepper to the corn and toss until evenly coated.
Step 3: Heat the Skillet
  1. Place a large skillet or cast-iron pan over high heat and allow it to become very hot.
Step 4: Add the Corn
  1. Transfer the seasoned corn to the hot skillet and spread it into an even layer.
Step 5: Roast the Corn
  1. Cook the corn without stirring for 2 to 3 minutes so it develops charred spots.
Step 6: Stir the Corn
  1. Stir the corn and continue cooking until more kernels become lightly blackened.
Step 7: Continue Cooking
  1. Cook for another 6 to 8 minutes, stirring occasionally until the corn is tender.
Step 8: Remove from Heat
  1. Take the skillet off the heat once the corn reaches your desired level of char.
Step 9: Add Lime Juice
  1. Drizzle the lime juice over the warm corn and toss to combine.
Step 10: Add Fresh Herbs
  1. Sprinkle the chopped parsley over the corn and mix gently.
Step 11: Taste and Adjust
  1. Taste the corn and adjust the seasoning if needed.
Step 12: Let It Rest
  1. Allow the corn to rest for 2 minutes so the flavors can settle.
Step 13: Transfer to a Serving Bowl
  1. Spoon the corn into a serving bowl.
Step 14: Serve
  1. Serve warm as a side dish, salad topping, or bowl ingredient.
